Sweeten up those weekend plans with some kitchen experiments involving gajar, dudhi, kaju, and this fun recipe by Chef Rajesh Shetty

Ingredients
Gajar halwa
- 500 gm grated carrots
- 250 ml milk
- 90 gm sugar
- 20 ml ghee
- 15 gm cashew nuts
- 10 gm raisins
- 10 gm pistachios
- 10 gm almonds
Dudhi halwa
- 500 gm grated dudhi
- 90 gm sugar
- 20 ml ghee
- 250 ml milk
- 2 gm cardamom
- 10 gm pistachios
- 10 gm almonds
Kaju filling
- 200 gm ground cashew nut
- 90 ml water
- 150 gm sugar
- 5 ml rose water
- 2 gm cardamom powder
- 10 ml ghee for cooking
- 5 ml ghee for greasing
Method
- Grate carrots, sauté in half ghee till some moisture evaporates. Add milk and let it cook till the carrots have become soft and the milk has almost evaporated.
- Add sugar to the remaining ghee followed by the toasted nuts and raisins.
- Grate dudhi and sauté in half the ghee. Cook till moisture evaporates and the mixture has become soft.
- Reduce the milk and then add to the dudhi mixture. Cook it further till the milk has evaporated. Add sugar, ghee and cardamom. Adjust seasoning accordingly. Add toasted nuts to the mixture.
- For the kaju mixture, mix sugar and water and boil rapidly. Add the ground cashew nuts and cook on low heat till the mixture leaves the sides of the pan, then add cardamom powder. Pour it on a pan and slightly knead the mixture. Spread on a greased tray and roll it to the desired thickness
- To assemble the bites place the dudhi halwa in the bottom of the pan. Then layer on the kaju mixture and top with gajar halwa. Leave it in the refrigerator for 1 hour for the mixture to set.
- To serve, cut them into squares and garnish with toasted nuts.
