As Veganuary runs strong this year, owing to a wellness based lifestyle spurred by the pandemic, the final week is what decides it all. How significant is your commitment to a vegan, or even a plant-based lifestyle? How sustainable can the lifestyle get? While going vegan might be challenging, and not altogether a sustainable concept across classes, there is definite merit to it. From health benefits, to taking some of the pressure of inhumane and resource-intensive animal farming, to being environmentally sound, there’s a lot to debate. 

It’s been contested a lot, but meat and dairy have often emerged as some of the worst contributors to greenhouse gas emissions, drive deforestation, accelerate biodiversity loss, and pollute the environment. However, going vegan just in your diet and not as a holistic lifestyle concept serves no purpose either. People mistake veganism as just the exclusion of meat and dairy from your diet, but there’s so much more to it. Sustainable living is one of the pillars of the choice, and applies to apparel, your purchases, groceries, and home.

Starting slow with the basics however, diet changes are definitely the gateway to a vegan path. Hershey India has curated some delicious vegan-friendly recipes curated by Chef Ranveer Brar to get you through the remaining days of Veganuary. 

What makes this recipe special is the ease of preparation, affordability (often the biggest enemy of vegan reasoning), and taste. Missing out on the meat flavour, most people struggle with making vegan food delicious, and thereby end up giving up on the cause altogether. This Nutty Broccoli Salad recipe is perfect for an evening snack at home, and will definitely go a long way in helping you stay committed to the vegan bandwagon!

Ingredients

For salad

  • 2 cups broccoli, florets (blanched)
  • ½ cup apple, chopped
  • ½ tsp sea salt
  • ½ cup almonds / roasted
  • ¼ cup dried cranberries or raisins
  • 1 tbsp fresh dill, sprigs
  • ½ Iceberg lettuce

For dressing

  • ¼ cup HERSHEY’S Strawberry Flavoured Syrup
  • 1 tbsp lemon juices
  • 1 orange zest
  • 1 tsp chilli flakes
  • Salt to taste
  • ½ tsp black pepper, crushed
  • 5 tbsp olive oil

Method 

  • In a bowl add HERSHEY’S Strawberry Flavoured Syrup, lemon juice, orange zest, salt, chilli flakes black pepper, mix will, and olive oil. Keep this aside.
  • Blanch chopped broccoli for 15 seconds. Soak it in ice water.
  • Next, chop some apples.
  • Tear the lettuce leaves carefully. Chop some almonds.
  • Now in another bowl add broccoli, apples, salt, almond, cranberries, dill, and ice. Mix and keep aside.
  • When serving add the dressing to the broccoli mixture and toss salad together. The dish is now ready to be served.
