For anyone who has visited the floating city, the opulent set within Palazzo Papadopoli is a must visit. This summer, the hotel is here with its exceptional Cook the Lagoon dining concept. And it’s aboard none other than the famed, historic sailing boat, Edipo Re.
Beginning June, Aman Venice’s Cook the Lagoon: Edipo Re Edition focuses on a concept that champions locally sourced yet elegant fare. What makes it special is the experience for the guests floating along the Laguna di Venezia.
The concept is a derivative of the ‘Cook the Mountain’ philosophy by Aman Venice’s consultant Chef Norbert Niederkofler. Here, they’ve focused on sustainable cultivation and farming, with the utmost consideration for the local ecosystem.
A homage to Chef Norbert’s method, Aman Venice’s Cook the Lagoon experience is served in the Palazzo’s opulent Blue Room. It comprises a six or eight-course tasting menu, incorporating the highest-quality local ingredients from Italy’s Veneto region to create inventive, flavourful dishes.
Incorporating the longstanding Venetian tradition of cooking with spices and seasonings from the Far East, dishes will be enhanced with familiar flavours. That of course, includes cinnamon, pepper and cloves, connecting guests to the spirit of Aman’s hotels globally.
The experience begins mid-morning with a relaxing boat ride from the hotel to Edipo Re’s mooring. Here, you will be greeted by Aman Venice’s Chef Matteo Panfilio, the boat’s owner and host Sybille Righetti, and Enrico, Edipo Re’s dedicated Captain.
Chef Matteo will prepare a selection of cicchetti (Venetian tapas) and four ‘free-style’ courses for up to 8 guests. Again, there’s heavy emphasis on the seasonal produce available, right from fresh lagoon fish to vegetables sourced from surrounding islands. Post a unique lunch, the Edipo Re takes you through the lagoon, navigating its many islands and giving diners discreet access to the abundance of nature.
For a dinner with such high stakes, the ambience isn’t left entirely up to natural conditions. To ensure a distinctly Aman-styled experience, Rivolta Carmignani has been tasked with creating the custom-made linens. The family-owned atelier has been producing fine linens in its historic Macherio headquarters for 150 years, and lends their expertise right from the beach towels and cushions to a bespoke tablecloth.
The boat itself is a historic revelation, and gradually came to be the scene of extraordinary crossings for Italian film director Pier Paolo Pasolini and for the neorealist painter Giuseppe Zigaina. Such is the significance for visionaries, that the launch of this new experience celebrates what would have been Pasolini’s one-hundredth birthday.
Given the boat’s history of a practical idea of sustainable tourism linked to the lagoon, its produce and the quality of life of the people who work there, the collaboration with Aman Venice seems destined.
