2 Exotic chicken recipes from two different regions of India

Chicken curry and chicken masala are of course delectable. However, try something new with these recipes for Pahadi chicken tikka quesadilla and Chettinadu chicken roast with salad, and celebrate a global-coming-together-of ingredients right in your kitchen, while savouring the taste of India too.

Mint Pahadi Chicken Tikka Quesadilla

Ingredients

  • As Chefs Cook Minty Pahadi Chicken Tikka Masala
  • As Chefs Cook The Spicy Mint Chutney
  • Chicken leg: 500 gms
  • Ghee or oil: 60 ml

Method

  • Take 500 gms of chicken legs and cut into small pieces. Set aside in a bowl for marination.
  • For 500 gms of chicken, you need half a bottle or 100 gms of As Chefs Cook Minty Pahadi Chicken Tikka Masala. Add the marinade to the chicken and mix well.
  • Cover the bowl with cling wrap and let it rest for two hours.
  • Line a baking tray with aluminium foil and brush it lightly with oil.
  • Now take the marinated chicken and skewer it in skewers or satay sticks. Line the skewered chicken on the aluminium foil.
  • Pre-heat the oven at 220 degrees Celsius and bake the chicken tikka for five minutes.
  • After five minutes, remove the tray containing the tikkas and drizzle oil on them. After this, cook them again in the oven for another five minutes.
  • After five minutes, remove the tray from the oven and drizzle some oil on the tikkas again to give them a shine.
  • Now remove the tikkas from the skewers with the help of a fork.
  • Serve hot with As Chefs Cook The Spicy Mint Chutney.

You can also make quesadillas out of the chicken tikkas.

For the Quesadilla

  • As Chefs Cook The Tangy Tomato Chutney
  • Chapatis or Pitas: 2 nos.
  • Cheese: 50 gms
  • Chicken tikka chopped roughly
  • Microgreens for garnish

Method

  • Apply the Tangy Tomato Chutney on both chapatis.
  • Place chopped chicken tikka on the chapati and sprinkle lots of cheese. Now place the other chapati (also applied with chutney) over this and press slightly.
  • Grill both sides of the chapatis evenly on a grill pan drizzled with oil till the cheese has melted and the fillings have come together. Once you get even grill marks on both sides, remove from heat.
  • Cut into quarters and serve hot with As Chefs Cook The Tangy Tomato Chutney.

Chettinad Roast Chicken Breast with Salad

Ingredients

  • As Chefs Cook Chettinad Tikka Masala
  • As Chefs Cook The Sweet Date and Tamarind Chutney
  • Chicken breast: 300 gms
  • Olive oil
  • Mixed greens
  • Broccoli
  • Tomatoes
  • Basil leaves
  • Olives

Method

  • Pierce the chicken breasts gently with a fork or skewer so that it absorbs the marinade well.
  • Add the marinade to the chicken breasts and mix well in a bowl. Cover the bowl with a cling wrap and rest for two hours.
  • Add some olive oil to a grill pan and heat it.
  • Before roasting the chicken turn the flame to low and place the chicken on the grill pan. Cook evenly on both sides adding a spoon of butter and basting the chicken as you cook it. Slow cook for a few minutes.
  • Rest the roasted chicken for a bit. In the meantime, grill tomatoes and sauté some broccoli and season them with a little salt and pepper. Set aside for plating.
  • Next, toast some garlic bread in a pan drizzled with olive oil. Toast evenly on both sides.
  • Plate the roasted chicken with grilled vegetables and toasted garlic bread and drizzle some olive oil. Serve hot.

Alternatively, you can also make a quick salad with the roasted chicken.

For the salad

  • In a bowl take some fresh mixed greens. Add olives and dress the salad with As Chefs Cook The Sweet Date and Tamarind Chutney.
  • Season the salad lightly and drizzle some olive oil.
  • Slice the Chettinad chicken breast evenly and carefully place it on the salad.
  • Garnish with some finely chopped parsley and grilled tomatoes.
  • Your salad is ready to be served.
