2 Must-try recipes with melt-in-your-mouth mushrooms

An ingredient that adds panache to any meal, mushrooms are a delectable option for gastronomes who want to try something different at the table. Here are two recipes featuring mushrooms that’ll leave you craving for more.

Ficelle Picarde

Savoury crepes filled with mushroom and goat cheese duxelle, topped with creamy Alfredo sauce, gruyere cheese, and gratinated to perfection.

Serves: 1

Ingredients

  • For savoury pancakes
    • American Pancake Co. All Purpose Flour: ½ pkt.
    • Water: ½ cup
    • Milk: ½ cup
    • Salt: To taste
  • For the filling
    • Olive oil: 1 tbsp.
    • Chopped onion: 2 tsp
    • Chopped garlic: 2 tsp
    • Chopped button mushrooms: ½ cup
    • Cooking cream: 2 tbsp
    • Goat cheese: 30 gms
    • Lime juice: 1 tsp
    • Salt: To taste
    • Pepper: To taste
  • Alfredo sauce
    • Salted butter: 2 tbsp
    • Ref. flour: 2 tbsp
    • Milk: 200 ml
    • Cooking cream: 2 tbsp
    • Salt: To taste
    • Nutmeg powder: A pinch
  • To finish
    • Gruyere cheese: 2 tbsp
    • Chopped parsley: 1 tsp
  • Method
    • For the pancake batter, mix everything together and strain to form a smooth mixture. Cook it thoroughly on both sides on a non-stick flat pan.
    • For the filling, sauté onion and garlic in olive oil. Add mushrooms and cook till done. Add cooking cream and reduce. Mix in goat cheese and season with salt, pepper, and lime juice.
    • For Alfredo sauce, make a roux with butter and flour. Gradually add the milk and whisk thoroughly, finish with cooking cream. Strain it for a smoother consistency. Season the sauce with salt and pepper and flavour with nutmeg powder.
    • Fill in the crepes with mushroom duxelle and roll it up like a cigar. Pour the Alfredo sauce and top with gruyere cheese and gratinate.
    • Serve hot garnished with chopped parsley and enjoy the Ficelle Picarde.

Mushroom and Tofu Pot Rice

  •     Ingredients
    • Button Mushrooms: 60 gms
    • Dry Shitake Mushrooms: 4-5 nos
    • Silken Tofu: 60 gms
    • Chopped ginger: 1 tsp
    • Chopped garlic: 2 tsp
    • Chopped bird’s eye chilli: 2 nos
    • Tai Hua Black Bean sauce: 3 tbsp
    • Tai Hua Dark Soy sauce: 1 tbsp
  • Method
    • In a pan, pour in some oil.
    • Add finely chopped garlic, ginger, and chillies.
    • Lightly sauté on low flame.
    • Then add the Button Mushrooms first and sauté.
    • Once Button mushrooms are half done, add in the dry Shitake Mushrooms.
    • Then add in the Tai Hua black bean sauce when the mushrooms are almost done.
    • Mix the gravy well.
    • Add water and simmer for 3-4 minutes.
    • Add a bit of Tai Hua’s Dark Soy sauce.
    • Drop in the tofu chunks and cook on slow fire for 6-7 minutes.
    • Season the gravy with a touch of pepper and salt.
    • Pour some cornflour slurry bit by bit to form a nice gravy. Do not add it all at once, but in batches.
  • For Mushroom and Tofu Pot Rice
    • Serve with jasmine rice at the base of the serving dish.
    • Pour the gravy on the rice.
    • Top it up with a drizzle of sesame oil and chilli oil.
    • Garnish with some scallion greens.
    • Serve hot and enjoy the Mushroom & Tofu Clay Pot Rice.
