Singapore’s Employees Only speakeasy comes to India this May

Anggels’ Share has partnered with Código 1530 tequila to get Employees Only Singapore’s chief mixologist Bryan Bonifacio for an India tour this May, starting today.

Leading importer of wines & spirits, Anggel’s Share has partnered with award-winning tequila Código 1530 to get the internationally popular cocktail bar Employees Only Singapore aka EO for a two-city bar tour of India from 5–8 May. The celebrated bar is a branch of the original New York speakeasy.

Leading the tour across India is Employees Only Singapore’s chief mixologist Bryan Bonifacio, who will be behind the bar in India creating magic with some Código 1530 cocktails. Bryan has created some cocktails exclusively for the tour like Lolita, a refreshing blend of Código Blanco, cognac, ripe mango ginger and hazelnut; Lazy Boy with Código Rosa, tomato water, jalapeno chartreuse, fresh lime juice and agave nectar; and Besos Caliente with Código Blanco, fresh lime and grapefruit cordial, among others.

Bryan got into the world of bartending while working at TGI Fridays in 2012, allowing him to hone his bartending skills over the next two years. He then went on to participate and win local flair bartending competitions paving his way to representing the Philippines in various competitions globally. Several accolades later, Bryan relocated to Singapore in 2018 and joined one of the most popular & highly regarded cocktail bars in Singapore & Asia, Employees Only Singapore (Asia’s 50 Best Bars 2017, 2018 and 2019, Top 500 Bars in the world 2019 and 2020, and Top 10 for Best International High Volume Bar 2020 at TOTC). With his love and passion for the craft, and his larger-than-life personality, Bryan is a crowd favourite at Employees Only Singapore.

Bryan spoke exclusively to TravelDine about his passion for bartending.

What drew you to the world of bartending?

I started bartending at the age of 18 as I fell in love with the art of flair bartending.

What cocktails can we look forward to on your India tour?

EO classic drinks from Singapore & New York.

What is your mixology philosophy all about?

I always believe in overall experience, not just focusing on the things we pour in the glass. But attention to detail, from prep, specific styles of spirit, cocktail-making technique and also touching the basic senses of our guests, is the most important.

How do you feel you’ve evolved as a bartender since you started out?

I feel that bartending is cool. But there are so many things to learn.

What foods pair best with tequila?

Red and white meat. You can never go wrong with tequila!

Is tequila having a moment in the world of cocktails?

Yes! Globally, the rise of consumers that are into agave spirits recently is huge. It’s a statement!

What is the next big trend to watch out for in the world of bartending?

We’ve been in the progressive bartending trend and we feel more highly conceptualised venues are popping up soon.

What is your favourite drink?

Margarita(s).

The tour kicks off on May 5, with an opportunity for the hospitality industry to interact with Bryan Bonifacio at an exclusive Mixologist Masterclass where he will share some bar techniques and knowledge alongside Justin Tan, Director of Código 1530 Asia who will speak on the history of Código 1530. The day will then meld into an evening EO Bar Takeover with Bryan Bonifacio at KOKO, Mumbai for a Tequila and Tapas Session.

Day 2 of the tour, Friday, May 6, entails a Cinco de Mayo EO Bar Takeover with Bryan Bonifacio at SOHO House, Mumbai to kick off the weekend on a good note. The Mumbai leg of the tour will end with a specially curated 10-course menu paired with Código 1530 cocktails curated by Bryan Bonifacio at Masque Restaurant. You can also walk-in and experience the cocktails at The Living Room @ Masque.

The second leg of the tour takes Bryan Bonifacio to Delhi hosting an EO Bar Takeover at Younion in South Delhi for a night of electric Código cocktails to beat the summer heat.
