  • 6 Tomatoes
  • Jalapenos
  • Salt
  • Crushed black pepper
  • Ketchup
  • 4 tortillas
  • 4 onions
  • Mushrooms
  • Red, green and yellow peppers
  • Corn
  • Mozzarella cheese
  • Cheddar cheese
  • Oil
  • Coriander leaves 


  • Boil tomatoes for 3-5 minutes.
  • Roughly chop tomatoes.
  • Add to mixer with jalapenos.
  • Add a generous pinch of black pepper.
  • 2-3 tbsp ketchup for the sweetness and colour.
  • Blend into a fine thin paste.
  • Toss chopped mushrooms in olive oil and flavour with salt and black pepper.


  • Take a readymade tortilla. 
  • Spread salsa.
  • Add julienned onions, mushrooms, and julienned bell pepper (red, green and yellow).
  • Add jalapenos for zest.
  • Garnish generously with Cheddar cheese.
  • Seal with another tortilla.
  • Heat oil on a non-stick pan.
  • On medium-high heat, toast the quesadillas.
  • Flip the quesadillas after 7 minutes and press to seal well.
  • Garnish with coriander.
  • To the remaining salsa, add chopped onions and coriander.
  • Serve hot with the salsa.
