It takes all but one conversation with Chef Shipra Khanna to spot her soft spot for desserts. A showreel of her career highlights would definitely consist of iconic recipes like her Yam Mousse, that won her the Masterchef apron and kick-started her entire journey. From her sworn love for desserts to her deft skills with fusion food, she’s an immediate standout on India’s gastronomic scene.

Touted as a dessert queen, Chef Shipra’s entire cooking philosophy revolves around cooking from the heart. Which works well as far as her sweeter experiments are concerned. Taking classic recipes and adding an Indian, homely twist to it, she’s made complex desserts a lot more accessible to the masses in general. 

With an entire arsenal of exotic ingredients available quite readily, Chef Shipra’s favourite one still remains true to her basics. “Vanilla beans are by far my favourite ingredient! It just enhances the flavour of desserts whilst keeping it very classic and blends with almost every fruity flavour!” she says. 

A familiar face on television and several other prestigious cooking shows and festivals, the chef’s latest outing has been Tadka Mar Ke. A fitting face for the show, she travels across several remote parts of India, discovering the local cuisine, and of course, adding her own touches to create something exquisite and unique. 

She recognizes desserts as her forte quite matter-of-factly, naming Garam Masala Carrot Cake with Mascarpone Cheese and Berry compote as her most iconic dish yet. While we may not have been able to get our hands on that recipe yet, these two dessert recipes for lemon yoghurt popsicles and cinnamon banana pancakes are as easy as they’re delicious. 

Staying true to her keep-it-simple ways, the recipes use just a handful of easily available ingredients and a few no-brainer processes to give you the ultimate desserts! 

Lemon Yoghurt Popsicles

Ingredients

  • 1 cup yoghurt (hung for a few hours)
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1 tsp lemon zest
  • 2 tbsp coconut cream

Method

  • Take a mixing bowl and mix all the ingredients well. 
  • Put this mixture into popsicle moulds and freeze for 3-4 hours at least before serving.

Cinnamon Banana Pancakes

Ingredients

  • 2 bananas
  • 1 egg
  • ½ tsp cinnamon powder
  • A pinch of salt
  • 1 tbsp butter

Method

  • In a mixing bowl, mash the bananas and beat in the eggs along with salt and cinnamon powder. 
  • Melt butter in a pan, and scoop out a portion and let it cook on either side for 2-3 minutes. 
  • Serve hot with some honey or maple syrup.
