A prescription for the perfect highball

A good cocktail is somehow always a great way to wind down after a long day. Or even celebrate a surprisingly short one! And what better than a highball for the same? 

Created by Feruzan Bilimoria, award-winning mixologist and Brand Ambassador at Stranger & Sons, this cocktail is all things aromatic, elegant yet complex. The bold and aromatic flavours of the pickler’s Prescription highball is the perfect accompaniment to diverse cuisines from across the country and around the globe.

Coming from a family that enjoys and appreciates food and spirits, Feruzan has always been curious about flavours since childhood. Post some phenomenal work across hotel bars, nightclubs and gastropubs, she decided to venture into the world of Gin with Stranger & Sons. And now, we have this delicious cocktail to thank her for! 

Pickler’s Prescription Highball

Ingredients

For the pickled apricot 

  • 350 gm dry Apricot with seeds
  • 250 ml white wine vinegar
  • 250 ml apple cider vinegar
  • 325 gm sugar
  • 70 gm honey
  • 5 gm cinnamon
  • 5 gm star anise
  • 1 bay leaf
  • 4 gm black peppercorn
  • 5 gm mace
  • 5 gm coriander seeds
  • 10 gm sea salt

For the cocktail

  • 60 ml Stranger & Sons
  • 20 ml pickled apricot brine
  • 100 ml soda water 
  • 1 pickled apricot, to garnish

Method

For the pickled apricot

● Make a little pouch of your spices by weighing them and wrapping it up in a little muslin cloth.

● Mix all the ingredients except for apricots and stir until sugar is dissolved.

● Simmer for 5 mins and skim the surface for any scum that forms.

● Add the apricots and let it stew for 2 mins.

● Switch off heat and let it rest for 2 days before using.

● Remove the spice bag after a week or else the flavours will get too strong.

● Keep the pickle refrigerated and it will last for months.

For the cocktail

● Keep a tall/highball glass in the freezer to chill (can be done a few hours prior).

● Measure and add Stranger & Sons and the apricot brine to the glass.

● Add lots of ice and top it with soda. Give it a light stir.

● Garnish with a pickled apricot.

● Serve immediately.
