These healthy salad recipes are the perfect way to stay cool as summer ends and welcome the monsoon.

And what better light and gut-friendly option than a good salad? High in nutritional value, a bowl of delicious salad is perfect to provide a healthy boost to your diet. Additionally, salads also offer protection from a variety of diseases and provide you with the benefits of cold-pressed edible oils, raw vegetables, and fruits. It contains enough fibre, protein, minerals, and vitamins when consumed on a regular basis.

Cranberry Apple Chicken Salad

Loaded with fruity goodness, this salad is rich in vitamin C, A and K and antioxidants. 

Ingredients 

  • 1 cup cranberries 
  • 1 cup diced apple
  • 1 cup diced chicken
  • Spring onion
  • 2 tbsp walnut oil
  • 1 cup cashew
  • Garlic 
  • Salt, to taste

Method 

  • Take cranberry, diced apple, diced and dry chicken and some chopped spring onion. Mix all of them together. 
  • For the dressing, you need walnut oil, cashew, some garlic, and some water. Add salt as per your taste and then grind it into a mix.
  • Once done, mix this cream into your salad and enjoy it.

Broccoli Cranberry Salad

Here comes the healthiest salad that you can prepare in minutes. Thanks to the broccoli, there’s plenty of vitamin A, C, K and B9, selenium in it. 

Ingredients 

  • Broccoli
  • Onion
  • Bell pepper 
  • Dry cranberries
  • Pumpkin
  • Sesame seeds 
  • Chopped almonds
  • Cashews 
  • 2-3 garlic cloves 
  • 2 tbsp sweet almond oil

Method

  • Take some chopped broccoli, onion, bell pepper and dry cranberry, pumpkin and sesame seed and some chopped almonds. 
  • Mix them all in a bowl and add some salt to it. 
  • For the dressing, make cashew cream that takes a handful of cashews, 2 to 3 garlic, 2 tbsps sweet almond oil and some water. Grind it all till smooth and use it to enhance the flavours of your salad. 

Green Bean Salad with Egg Topping

Who knew bean salad could be this good? Dress it up with hard-boiled egg, parsley, and crispy breadcrumbs to make it a meal. It’s the ideal salad to make ahead of time, since the flavours deepen as it sits in the fridge.

Ingredients

  • Gram Green beans – topped
  • Olive oil
  • Butter
  • White breadcrumbs
  • Parsley, chopped
  • 1 egg (hard boiled and shelled)
  • Salt

Method

  • Bring a large pan of salted water to a boil. Add the beans and cook for 6 minutes.
  • Drain well and toss the beans in olive oil and allow it to cool.
  • Heat the butter in a large frying pan and add the breadcrumbs and fry until they turn golden.
  • Remove the pan from the heat and add the chopped parsley and then grate in the egg.
  • Place the beans in a shallow box and spoon on the breadcrumb topping. 

Quinoa and Chickpeas Salad

This salad is packed with protein. Quinoa is gluten-free and nutritious, high in fibre that even helps you live longer. Chickpeas on the other hand are rich in fibre and vitamin B6, copper and zinc. Nothing but goodness here! 

Ingredients 

  • Quinoa 
  • Boiled chickpeas 
  • Kale 
  • Salt, to taste 
  • Lemon
  • Pumpkin seeds 
  • Olive oil 

Method 

  • Take cooked quinoa and boiled chickpea and chopped kale. Add them in a bowl; put some salt, squeeze a few drops of lemon, pumpkin seed and olive oil. 
  • Give it all a nice mix and your salad is ready!
