It warms the cockles of my heart to see a health food revolution brewing everywhere I look. I think we’re done with fried-to-death, over-salted and sugary foods making their way to our plates when we eat out. I say this on the strength of several healthy meals I’ve had in quick succession, each more interesting than the other. The first was at OMO Café, Gurugram, where I was shooting a video with Chef Vanshika Bhatia. That’s a chef to watch, creating magic on the plate with effortless ease and seasoned intuition. That meal was an epiphany for me. We’ve been eating wrong all this while. I realised that food can be perfectly healthy without compromising on taste. I next checked out Fig at Malcha, a sprawling and stylish new café in Delhi’s exclusive Chanakyapuri area. Surrounded by embassies and upmarket residences, this restaurant offers comfort food executed with a rare degree of finesse. Not only that, there are a plethora of soups and salads on offer, across a range of cuisines. Nothing I sampled was too salty or over-fried, and everything tasted brill. A lot of thought has gone into everything, even something as simple as the coffee. All of the coffee at Fig is ethically sourced from across India, and every bean can be traced back to the farmer who grew and harvested it. I think the consumer of the future will expect this sort of information and attention to detail as par for the course.

Another one to watch is The Leela Hotels, whose nutritionally-dense Aujasya menu is available across its properties. I recently tried both the lunch and breakfast offerings, and come away absolutely blown. If a major hotel chain is embracing health food in such an ambitious and earnest way, I think there’s a tectonic shift happening — for the better.
