These pancakes are also pleasantly light and fluffy. No one can resist because it’s a real, sweet treat for mornings!
Gingerbread Pancake recipe:
Ingredients
● 2 cups/ 256 grams all-purpose flour
● 2 tbsp dark brown sugar
● 1½ tsp baking powder
● ½ tsp baking soda
● 1 tsp salt
● 2 tsp ground ginger
● 2 tsp ground cinnamon
● ½ tsp ground all spice
● 1¼ cups whole milk
● ⅓ cup unsulfured molasses
● 2 Eggs
● 3 tbsp unsalted butter, melted
● 1 tsp finely grated fresh ginger
● ½ tsp finely grated lemon zest
Method
- Using a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt & spices. (Mixture 1)
- Using a separate bowl whisk the milk, molasses, eggs, melted butter, fresh ginger, and lemon zest together thoroughly. (Mixture 2)
- Add the mixture 2 ingredients to the mixture 1 ingredient and gently stir until combined. (A few small lumps are fine.)
- Over low heat, preheat a non-stick skillet that has been lightly oiled. Drop the pancake batter onto the pan by using a quarter cup.
- Cook the pancakes for one or two minutes on each side or until they are a light shade of dark brown on both sides.
- The gingerbread pancake recipe is ready. Serve the pancakes with your choice of fruits, honey or maple syrup.
